Preheat oven to 350 degrees

1c sunflower seeds
1 c ground flax seeds
2/3 c pumpkin seeds
2/3 c almonds (whole)
2/3 c pecans (pieces or halves)
2/3 c coconut

1/2 tsp salt
2 tbsp olive oil
6 eggs
2 tbsp chia seeds
(1 tsp cinnamon/ ½ tsp ginger/ ¼ tsp cloves or allspice or 1 tsp dill/ ½ tsp curry)

Beat eggs and add salt and olive oil to form a bit of an emulsion.  Add the seeds and nuts except for the chia seeds and mix well.  Add chia seeds last as they absorb the liquid and mix them in.  The result is quite runny.  Add herbs and spices if you would like a sweet or savoury loaf.  Place in 2 oiled 6” x4” loaf baking pans and bake for 45 minutes.  The bread is quite firm when done.  Slice thinly and toast.  Spread almond or seed butter on the slices (for the sweet bread) and enjoy!
