¼ cup coconut oil, softened
½ cup honey
2 eggs
1/3 cup water
1 tsp vanilla extract
4 cups almond flour
1 ½ c sorghum flour
¼ tsp baking soda
¼ tsp salt
½ cup sesame seeds
¼ cup sunflower seeds
½ cup shredded coconut
1 cup almonds
1 cup currants or raisins
1 c candied ginger
4T organic orange rind

Heat oven to 325 F. Mix the butter and honey together until well mixed. Mix in the eggs, water and vanilla. Add the rest of the ingredients and mix well. Chill the batter in the fridge for 30 min. Roll tablespoon sized portions of the dough into balls and place on a cookie sheet. Flatten each ball with a fork. They can be placed fairly close together because they won’t spread. Bake 12-15 minutes until golden around the edges. Cool on cookie tray rack.
