1 C Quinoa flour (or 1 C teff flour)
1 C Brown rice flour
1 1/3 C buckwheat flour
2/3 C Cornmeal (or 1 1/3 C cornmeal)
½ tsp salt (or 1 tsp salt)
4 tsp non Aluminum baking powder
4 eggs
4 C soy, coconut or almond milk
1 Tbsp Vanilla
¼ C olive oil
2 egg whites whipped (optional)
chopped almonds/sunflower seeds or other seeds for protein

Mix the dry ingredients well. In another bowl beat the eggs, milk, oil and vanilla with a wisk or beater. Gradually mix in the dry ingredients. Lastly blend in the whipped egg whites and nuts or seeds. Lighty oil the waffle iron. Make sure the waffle iron is hot before you pour the batter on! Top with fruit, yogurt or maple syrup/honey.

Note: eggs & oil add air to the waffle.
You can mix the dry ingredients and store for future use.
