Medium Size Loaf

Dry Ingredients

Four flour bean mix (see below) – 3¾ cups
Xanthan gum – 2¼ teaspoons
Salt – ¾ teaspoon
Unflavoured gelatin – 1½ teaspoons
Chopped nuts (almonds/hazelnuts etc) – 1/3 cup
Sesame seeds – 1½ tablespoons
Poppy seeds – 1½ teaspoons
Flax seeds – 1½ teaspoons
Sunflower seeds – 1½ teaspoons
Dry yeast granules – 4 teaspoons

Wet ingredients

Eggs – 3 eggs
Honey – 1 tablespoon
Coconut oil – 3 tablespoons
Vinegar (rice or balsamic) – 2 teaspoons
Warm water – 1 cup (more or less)

Grease your bread maker and dust with rice flour. Place the dry ingredients in first, followed by the wet ingredients. Use a setting for whole grain with a medium crust

Bean Flour mix (for 9 cups)

Fava or garbanzo bean flour- 3 cups
Tapioca Flour- 3 cups
Cornstarch – 3 cups
