Raw Energy Balls (2 dozen balls)

1 cup raw almonds
1 cup medjool dates – pitted
¼ cup currants
¼ tsp cinnamon
¼ tsp cardamom
¼ cup almond butter
¼ cup sunflower seeds

Grind almonds in food processor & add dates, currants, sunflower seeds and spices and chop finely.  Add the almond butter & process again. Form into balls and roll in shredded coconut.


Butter Pecan Cookies (18-20 cookies)

2 cups almond flour
1 tsp cinnamon
¼ tsp sea salt
½ tsp baking soda
1 cup chopped pecans
½ tsp vanilla extract
1 egg
½ cup butter + ½ cup honey

Heat oven to 325 F.  Combine the almond flour, cinnamon, salt, baking soda and pecans in a bowl.  Combine vanilla, egg, butter and honey.  In another bowl.  Add dry to wet & mix.   Drop 2 tablespoon portion on cookie sheet 2” apart & bake 10-12 minutes.


Sand Cookies (4 dozen)

2 2/3 cups almond flour
½ lb (250 g) butter, softened
¼ cup honey
1 cup ground pecans

Heat oven to 300 F.  Mix all ingredients.  Shape the cookies into small crescents or half moons and place close together on a greased cookie sheet.  Bake 15 minutes or until edges turn brown.


Chocolate Truffles (1½ dozen)

2 cups raw pecans
1 cup medjool dates – pitted
6 tbsp cocoa powder
¼ cup almond butter

Grind pecans in food processor until finely ground and pasty.  Add dates, cocoa powder and almond butter and process until well-combined.  Roll in shredded coconut.


Goldenmarsh Cookies (4 dozen)

¼ cup butter, softened
½ cup honey
2 eggs
1/3 cup water
1 tsp vanilla extract
3 cups almond flour
¼ tsp baking soda
¼ tsp salt
½ cup sesame seeds
¼ cup sunflower seeds
½ cup shredded coconut
1 cup almonds
1 cup currants or raisins

Heat oven to 325 F.  Mix the butter and honey together until well mixed. Mix in the eggs, water and vanilla.  Add the rest of the ingredients and mix well.  Chill the batter in the fridge for 30 min.
Roll tablespoon sized portions of the dough into balls and place on cookie sheet.  Flatten each ball with a fork.  They can be placed fairly close together because they won’t spread.
Bake 12-15 minutes until golden around the edges.


Sunflower Seed Butter Clusters (2 dozen)

1 cup almond flour
¼ tsp baking soda
1/8 tsp ground cinnamon
½ cup ground almonds or pecans
2 eggs
1 tsp vanilla extract
½ cup honey
1 cup sunflower seed butter
2 tbsp butter

Heat oven to 325 F.  Combine the almond flour, baking soda, cinnamon and ground almonds or pecans in a bowl.  In another bowl, combine the eggs, vanilla, honey, sunflower seed butter and butter.  Mix well.  Add the dry to wet ingredients and mix again.  Chill dough for 30 min.
Drop heaping tablespoon-sized portions of the batter about 2 inches apart onto cookie sheet.
Bake for 8-10 minutes.  Be careful not to over-bake this cookie because it will lose flavor as it dries out.  Don’t wait until you see the cookies brown on the outside—they should be slightly underdone and look dark or wet in the centre. They come out soft and best eaten “gooey”.


Sunflower Bars (2 doz squares)

1 cup raw cashew/almond butter
1 cup honey
1 cup chopped pecans
1cup unsweetened coconut
1 cup raw sunflower seeds
1 cup currants or dried cranberries

Heat oven to 350 F.  Heat the cashew/ almond butter and honey in a saucepan until melted and smooth.  In a bowl, mix together the pecans, coconut, sunflower seeds and currants or cranberries.  Add the melted mixture to the dry ingredients and mix until well-combined.  Pour into a 9 x 12” square pan and press flat.  Bake for 20- 30  minutes.  Remove from oven and cool.  Cut into squares and store in an airtight container.


Raw Chocolate Hazelnut Brownies (1 doz )

1 cup raw hazelnuts
½ cup raw almonds
1 – 1 ½ cups medjool dates, pitted
½ cup raw almond butter
6 tbsp organic cocoa powder
3 tbsp raw shredded coconut

Place the hazelnuts and almonds in a food processor and process until finely ground.
Add the pitted dates, almond butter and cocoa powder and process until completely
mixed.  Firmly press mixture evenly into a 8 x 8 inch pan.  Sprinkle with shredded
coconut.  Cut into squares when ready to serve.  Refrigerate in a covered container.
