This is a great salad in the winter when you’re missing those greens from the garden.
It combines the spicy taste of arugula to contrast the sweet taste of the figs and pears
with the sharp taste of the crotenese cheese. The pecans give it some protein and a nice
crunch! Again, the greens offset the acidity of the balsamic vinegar.
4 c arugula
4 c mixed greens
10 dried figs-chopped
¼ c toasted pecans
2 pears- chopped
¼ c sheep crotenese cheese
Add all ingredients to a salad bowl & toss
Combine ¼ c balsamic vinegar with 1/8 c honey and drizzle over salad before serving.
